You could make apple dumplings sugar free by baking these without maple syrup and perhaps just making a cinnamon-nutmeg compound butter. Not a fan of butter? Swap in coconut oil, paleo weirdos.
And if you are gluten-free, a 1-to-1 flour mixture would work well. Although, I haven't tried it so I don't know.
To Make the Sauce:
Bring 1 cup maple syrup, 1 cup water, 1/8 tsp cinnamon, and 1/8 tsp nutmeg to a boil. Slowly add in 2 tbps. butter. Remove from the heat.
To Make the Dough:
Place 2 cups flour, 2 tsp. baking powder, and 1 tsp. salt in a medium bowl. Stir well. Cut in 2/3 cup shortening. Add 1/2 cup milk and stir until just moistened. Shape into a disk and roll out on a floured surface. The dough needs to be thin enough to support 6 apples.
Core 6 apples. Place the apples onto the dough and stuff the cinnamon-butter mixture in the core. Bake at 375 F for 35 minutes.
